Once I was talking to a friend, and I mentioned that I would be serving deviled eggs at my daughter birthday. “What!” she exclaimed. “Deviled eggs are an Easter thing!”
Now, I don’t know if she said that because she was born and raised in LA, and it turns out that your perspective on deviled eggs is completely based on the region where you grew up. But as a girl born and raised in the South, deviled eggs were an ALL TIME thing… They were served at all potlucks, family reunions, church events, cookout, holidays, you name it. And growing up, most of the deviled eggs I encountered were all the same: mayo, a little bit of mustard, pickle relish, and healthy scattering of paprika on top.
Don’t get me wrong. These stereotypical deviled eggs were good, but as an adult, I decided to get creative and elaborate upon some of my favorite foods. Deviled eggs were one of the first ones I attempted to enhance. And since I love decadence and I love spicy things, it only made sense that I would try my hand at making jalapeño bacon deviled eggs.
Turns out that I hit it out of the park with my recipe development! I made these eggs for my daughter’s birthday party, and people could not stop raving about how they were the best deviled eggs they had ever eaten. That birthday party was two years ago, and I am still making jalapeño bacon deviled eggs till this day. That’s how good they are. And everyone still gets excited when I show up to a party with a tray of these bad boys. They are creamy and rich and salty with just the right amount of spice. In other words, they are perfection in just a couple of bites.

How to Make Paleo Jalapeño Bacon Deviled Eggs

Description
These are not your ordinary deviled eggs; these are to die for! They are a super quick and easy appetizer, perfect for any party or get together. Be sure to try these Jalapeño Bacon Deviled Eggs; best of all, they are also paleo and Whole 30 friendly!
Ingredients
6 pasture-raised eggs
3 strips sugar-free, nitrate-free bacon
2 Tbsp. Primal Kitchen Avocado Mayo
1 Tbsp. jalapeno, diced
1/2 Tbsp. red onion, diced
Instructions
In a pot, boil the eggs for twelve minutes. Drain and set aside to cool. Meanwhile, cook the bacon until crisp, reserving 1 Tbsp. bacon grease. (So sue me!)
Once the eggs are cool, peel and cut them in half, reserving the yolks.
In a bowl, combine the yolks, mayo, bacon grease, jalapeño, and red onion. Stir the mixture until well combined.
Fill the egg whites with the jalapeño bacon mixture and serve.
