My sister-in-law went to college at New York University, and I was always so amazed at what a city girl she was. When I went to college in rural Georgia, I was terrified to be apart from my parents. I remember crying as I got dropped off at school, and I begged my dad to let me commute to college from home. Yeah, I was a fraidy-cat.
My sister-in-law, on the other hand, at the age of eighteen couldn’t wait to be away from her parents. Not only that, she couldn’t wait to be far away… clear across the country. And once she was in NYC, she dominated the city. She knew every borough and the best routes to get from Point A to Point B. She also knew how to get by on a college girl budget. Needless to say, I was a little jealous. I wish I had been that brave and self-assured in college.
And that leads me to whipped cream…
I don’t know if Starbucks still does this, but back in 2004, you could order a cup of whipped cream. Straight up whipped cream with nothing else, and they would give it to you for FREE! I have no idea how my sister-in-law discovered that they did this, but she did. So almost every day on her way to class, she would stop and get a cup of whipped cream.
The story of the free whipped creams became something of a legend in our family, a shiny example of how my sister-in-law knew how to run the show. And then, about a year ago, I was talking to a friend when she said, “So I took my dog to Starbucks for a Puppuccino.”
“A what?” I asked.
“A Puppuccino. Wait! You don’t know what that is?”
“No.” So she described it to me. And do you know what it is? You guessed it! A cup of nothing but whipped cream.
Hahaha! This was absolutely hysterical to me! Learning this completely changed the story of my sister-in-law’s domination of New York City. Instead of her milking the system, she was walking around eating a Starbucks secret menu item for dogs. Immediately, I felt less intimidated. Agh! Too funny!
Anyway, moving on. If you are like my sister-in-law and could eat whipped cream every day, then you are in luck. I’m going to teach you how to make a dairy-free, paleo version that is going to blow your socks off. Are you ready? It couldn’t be any easier. You only need two ingredients.
A can of coconut cream and some coconut sugar. Really, that’s it! (And if those are foreign ingredients to you, no worries! You can both online at Thrive Market for super cheap prices and have them mailed directly to your door.)
Then, you beat it all together until it looks like whipped cream and soft peaks have formed. Oh yeah, look at this! Can you say, “yum”?

How to Make Paleo Whipped Cream

Ingredients
1 14 oz. can of coconut cream, chilled in the fridge 5-6 hours or overnight
1/2 Tbsp. coconut sugar
Instructions
Chill a glass mixing bowl in the refrigerate along with your can of coconut cream.
Once chilled, remove the solid cream from the can and place in the glass mixing bowl. Drain any excess liquid away. Add the coconut cream
Using a handheld mixer, beat together until the coconut cream begins to form soft peaks, around 2-3 minutes.
Use immediately or chill in the refrigerator until ready to use.
Notes
If you can’t find cans of coconut cream, you can always use full fat coconut milk. It’s especially important to chill them overnight. In the morning, the cream will rise to the top. Usually only half of the can is cream. The rest is liquid so if you use coconut milk, you’ll need 2 14 oz. cans.
