Growing up, these were my favorite cookies. I loved how chocolatey and peanut buttery they were without being super rich. This meant I could eat a handful and not feel sick. Hey, I was in elementary school! This is how my logic worked.
There was only one problem with these cookies… I could never eat them unless my Aunt Evelyn made them and gave them to me as a gift. For that reason, I never knew their proper name; I always just called them Aunt Evelyn Cookies.
I wish I had known their real name though. If I had, I probably would have looked them up and discovered how easy they were to make. I mean, they are literally the easiest cookies in the entire world. Not kidding!
Reflecting back on it, I think there was a giant family conspiracy against me. I am pretty sure that my mom knew how to make them, and she deliberately kept their simplicity a secret. She probably realized they if she divulged how easy they were, I would end up begging her every week to whip up a batch. So instead she said nothing, leaving me to always have to wait patiently until the next time I saw my Aunt Evelyn. Sigh!
Finally, one day I decided to ask my Aunt Evelyn how she made them, and I was shocked by how effortless they were. So I then went on to make them for myself… again and again and again. And over time, I perfected the recipe. I find that I like them best when I reduce the amount of peanut butter and increase the chocolate. Try it and see if you agree.
So are you ready to make some super simple, super delicious cookies? Then you need to get all of your ingredients measured and ready. I am serious. These come together so fast that you might ruin them if you are still trying to scoop and measure things while stuff is on the stove.
Now then, got all your ingredients prepped? Great! Let’s get started.
In a medium sized saucepan, combine the butter, milk, sugar, peanut butter, and cocoa powder. Place on the stove and cook at a medium heat, stirring to combine, until it comes to a rolling boil (not just a tiny boil along the edges, but the whole thing really boiling).
Allow to boil for exactly one minute (set a timer!). When the timer goes off, immediately remove from the heat and stir in the oats.
Have your countertop already cleaned and prepped by covering it with parchment paper. Using a small cookie scoop, scoop up the mixture and drop onto the parchment. If you leave it as is, you will have smaller cookies that are thicker. To have your cookies appear like mine do in the picture below, smush the mixture down using the back of the scoop.
Once all of the mixture has been dropped onto the parchment, allow it to sit at room temperature for at least 45 minutes. Once it has cooled and hardened, place the cookie in an airtight container. The cookies keep in the fridge for 3 days, if you have them around for that long. But who are we kidding, right?
So go into your kitchen right now and make these. Today is a great day to bake make no bake cookies!

Ingredients
3 cups quick cooking rolled oats
1/2 cup grass fed butter
1/2 cup whole milk
2 cups granulated sugar
1/2 cup creamy peanut butter
5 Tbsp. cocoa powder
1 tsp. pure vanilla extract
